One of my favorite things to enjoy at a picnic is Cole Slaw. There’s a restaurant near our cabin that we really like going to, and their cole slaw has a distinct apple-y flavor to it, so I thought this recipe would be the perfect thing to accompany our first feast of Barbecue Ribs for the season. The sweet/tart flavor of this Apple Cole Slaw was the perfect thing to complement the spicy heat of the ribs. This recipe is quick and easy to put together. Purchasing a bag of Cole Slaw mix saves some extra prep time also, leaving the only thing for you to do is julienne the apple (cut into matchsticks) and toss all of the veggies together. Whisk together the dressing ingredients, stir into the veggies, and refrigerate for at least one hour prior to enjoying. This allows the flavors to fully incorporate.
