One of my favorite things to enjoy at a picnic is Cole Slaw. There's a restaurant near our cabin that we really like going to, and their cole slaw has a distinct apple-y flavor to it, so I thought this recipe would be the perfect thing to accompany our first feast of Barbecue Ribs for the season. The sweet/tart flavor of this Apple Cole Slaw was the perfect thing to complement the spicy heat of the ribs. This recipe is quick and easy to put together. Purchasing a bag of Cole Slaw mix saves some extra prep time also, leaving the only thing for you to do is julienne the apple (cut into matchsticks) and toss all of the veggies together. Whisk together the dressing ingredients, stir into the veggies, and refrigerate for at least one hour prior to enjoying. This allows the flavors to fully incorporate.

Apple Cole Slaw
Ingredients
- 2 packages Three-color Cole Slaw mix OR 2 cups shredded green cabbage, 1 ½ cups shredded red cabbage, and 1 cup matchstick carrots
- 1 Granny Smith apple, julienned
- 2 tablespoons mayonnaise
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Juice of 1 lemon
- 1 tablespoon poppy seeds
- Kosher salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrot and apple.
- In a large glass measuring cup, whisk together the mayonnaise, olive oil, vinegar, lemon juice, poppy seeds, salt and pepper, to taste.
- Pour mixture over cabbage mixture and stir using a rubber spatula until well combined. Cover and place in the refrigerator for at least one hour.
- Serve cold.

I don't like really heavy cole slaws but I love anything tart and sweet! The combination of apple and a little crunch from the poppy seeds sounds perfect. Definitely trying this weekend!
