This week we are trying out some new breakfast recipes, and I love that this dish includes corn. I am not a pancake and eggs type of breakfast eater, so something a little more savory is perfect for me. This meal was so delicious and easy, and will definitely be returning to our breakfast (or dinner!) table in the future.
Updated April 2015: Bacon and Corn Breakfast Hash has been a favorite of ours for a few years now. We have made it with many types of potatoes, and have used cooked frozen corn when fresh corn on the cob is not in season. It’s delicious every single time.
