You don’t have to be on a luxurious vacation or cruising in an exotic location to enjoy some pampering. I am not much of an egg person, but these have begun to grown on me. I’ve experimented with them a few times, but their simplicity is their strongsuit in my humble opinion. They make for a good option for breakfast in bed. Nothing too fancy or messy, not a lot of dishes to wash, and they are all ready at the same time, so everyone involved gets to eat together.
2 large eggs (per person)
cheese (I like parmesan or cheddar)
salt and pepper, to taste
~Preheat oven to 450 degrees.
~Butter ramekins. Gently crack 2 eggs into each ramekin. Top with green onions, crumbled bacon, and cheese. Sprinkle with salt and pepper as desired. Bake for 10-12 minutes, until eggs reach desired done-ness. Michael likes his yolks a bit runny yet, and I prefer mine cooked through more.
