I had every intention of trying James Beard's Deep Dish Blueberry Pie recipe (since it was in my Cookbook of the Week) and loving it and sharing it with all who may take the time to read these posts... (By the way, thank you for reading.) I did try it and I did enjoy the flavors, however in the grand scheme of my history of pie-making, it was one of my most disastrous undertakings. Too many berries (yes, it is possible), too much butter, and not enough flour. Picture way too much liquid spilling over everywhere in my oven, billowing smoke, and a trip out of the house for a while to let the smoke clear... The pie itself was quite tasty, although it was still insanely liquidy despite the tremendous volume lost to the bottom of the oven.
Anyhow, I decided I needed to give it another try. Here's what I came up with after a little playing around. Hope you enjoy! It was a perfect success with no smoke or spills this time, so I was very happy. Not to mention that it was delicious, and made Hubby happy...so happy in fact that he had a piece for breakfast. Go ahead, try it. You'll want some for breakfast too!
PrintBlueberry Pie
- Cook Time: 50 minutes
- Total Time: 50 minutes
- Yield: 1 pie 1x
Ingredients
- Double batch of your favorite pie crust dough
- 4 cups fresh blueberries
- 1 cup sugar
- ¼ cup all-purpose flour
- 1 teaspoon cinnamon
- ⅛ teaspoon ground cloves
- ⅛ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cut into small cubes
- 1 egg yolk, lightly beaten
- “Sugar in the Raw” or turbinado sugar, for sprinkling
Instructions
- Preheat the oven to 400°F.
- Roll out half of the pie crust dough and place in bottom of pie pan.
- In a bowl, combine blueberries, sugar, flour, spices, and lemon juice. Spread into prepared pie crust. Dot filling with butter pieces.
- Roll out second half of pie crust dough and cover filling. Cut slits to vent, or cut dough into strips and assemble in a lattice pattern.
- Brush crust with egg wash and sprinkle with sugar.
- Bake in lower third of oven for 50 minutes.
- Enjoy!

This is THE pie! Perfect filling, the best crust, antioxidants: it has it all. If the queen is coming over: get some tea (Her Majesty's Blend [of course]) and make this pie.
You'll also want to wear clean pants.
