Cantaloupe Strawberry Leather
Credit: A Fork in the Trail by Laurie Ann March
Ingredients:
1 cup cantaloupe
½ cup strawberries
Directions:
At Home~
Puree the cantaloupe and strawberries separately. Strain the strawberry puree through a fine mesh sieve. Spread the cantaloupe puree about¼ inch thick on lined dehydrator trays. Then pour the strawberry puree in a ribbon on top of the cantaloupe puree. Run a toothpick or skewer back and forth through the purees, making a swirl pattern.
Let the fruit dry for 6 to 15 hours (depending on the moisture content and ripeness of the fruit) until it is pliable like leather. Cut into pieces, wrap it in plastic wrap and store it in the refrigerator until your trip. This snack will keep for up to 6 months if refrigerated and for 6 to 8 weeks without refrigeration.
** I let mine dry for 8 hours (overnight), and I found that that was too long. Make sure to check it frequently as the 6 hour mark approaches.
