Cast-Iron skillets are great for all sorts of things, but it's not very often that I bake desserts in mine. This giant cookie is the perfect treat to put your cast-iron skillet to good use, since cast-iron distributes heat so evenly you'll end up with a perfectly baked cookie. None of that dreaded dark-around-the-edges and raw-in-the-middle fiasco that we have all experienced.
This Cast-Iron Skillet Chocolate Chip Cookie recipe is a classic chocolate chip cookie that you can enjoy by the slice. You can serve it as-is with a glass of milk, or decorate it with some icing for a special occasion (like the cookie bakeries at the mall), OR top a big slice of cookie with a scoop of vanilla ice cream and hot fudge. Chocolate chip cookie sundaes are genius, and the perfect treat for the birthday or special celebration for someone who doesn't love cake (who doesn't love cake though?).
Cast-Iron Skillet Chocolate Chip Cookie
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: Serves 8
Ingredients
- 6 tablespoons (¾ stick) unsalted butter, softened
- ⅓ cup packed dark-brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, combine butter, dark brown sugar, and granulated sugar with a wooden spoon. Stir in egg and vanilla. Stir in flour, baking soda, and salt. Stir in chocolate chips.
- Spread cookie dough in a 10-inch cast-iron skillet; smooth top. (Tip: I find it is easiest to spread the dough by laying a sheet of parchment or waxed paper on the surface of the dough, and then pressing and spreading the dough to cover the pan evenly, then peel away the paper.)
- Bake until cookie is golden brown and just set in the center, about 18 to 20 minutes.
- Let cool 10 minutes before slicing.
- Enjoy!

Still hungry for more cookies?
Try these White Chocolate Macadamia Cookies. They're glorious. And they've got brown butter. YUM.
Or these Inside-Out Chocolate Chip Cookies. Rich, but not too rich. Perfection.
These Peanut Butter Cookies are the best peanut butter cookies I've had. Ever.

Mmmm...this looks perfect! I love that you don't have to do much while it's cooking - I imagine it would work quite well to have it prepared before dinner and then have it cook while you eat the main course. Yum!
Mandy
That would work great! It only takes a minute to stir up the batter, plus the cookie needs a few minutes to cool before slicing (or you'll have to eat your cookie with a spoon)...that way it's ready and waiting for you whenever dinner is finished. The skillet keeps it warm for a long time.

My oh my, this is perfection! I know what I'm making for my brother's birthday (and mine)!

I haven't used my cast-iron for baking sweets yet, but this is tempting :-)
