Fish and Chips is probably my favorite way to enjoy fish. Honestly though, put tartar sauce and french fries with just about anything and I’m happy, but this particular recipe for fish and chips is quite possibly the best I’ve had. Except maybe the fresh-caught salmon version that we enjoyed in Alaska a couple of years ago. That was such an incredible all-around experience, that nothing can compete.
Truthfully, I like the actual taste of this version better. I like salmon best when it is smoked, poached, or baked instead of battered and fried. Feel free to use the fish of your choice. Cod or Halibut are great choices. We used Tilapia this time, and we loved it. You can, of course, use freshly-caught fish or frozen fillets. If using frozen, be sure to thaw them in the refrigerator overnight.
