Grown-Up Grilled Cheese

Ingredients:
4 slices crusty bread
Olive Oil
Freshly ground pepper
1 ½-2 cups Gruyere, grated
1 ½-2 cups Fontina, grated
Directions:
Brush bread slices with olive oil and grill in cast iron skillet over medium-high heat until golden on both sides. Sprinkle one side with freshly ground pepper and top with equal parts Gruyere and Fontina. Place skillet in hot oven until cheese is melted. Serve.
*Serve open-faced with Tomato-Basil Soup.
