While pizza and pasta are perfectly wonderful, Hubby and I have been craving some meat. And by meat, I don't mean prosciutto, because we have definitely been consuming that at an alarming rate. We needed something a little more hearty and homestyle to fill us up after several days in a row of rainy weather here in Italy. There is an over-abundance of good tomatoes, mozzarella, and fresh bread available over here, so shopping for these sandwiches was simple.
These Italian Meatball sandwiches were so delicious that we talked about them for a few days afterward. Fortunately we had enough left over for a couple of sandwiches too. I should warn you though: Only eat these with people who will love you unconditionally, and never while wearing a white shirt. You may or may not end up with red sauce here, there, and everywhere. Believe me, it's totally worth it.

Ingredients
- 1 ½ pounds ground beef
- 2 tablespoons minced onion
- 2 gloves garlic, minced
- 1 tablespoons fresh parsley, minced
- ⅔ cup breadcrumbs
- ⅓ cup grated Parmesan
- 1 large egg, lightly beaten
- 2 tablespoons olive oil
- 4-6 cups Marinara Sauce (Homemade Marinara or Tomato Sauce with Butter and Onion both work great for this recipe.)
- 4-6 ounces fresh mozzarella
- 4 sandwich loaves or rolls
Instructions
- In a large bowl, gently combine ground beef, onion, garlic, parsley, breadcrumbs, Parmesan, and egg until all ingredients are incorporated.
- Using clean hands, roll the meat mixture into 12-16 meatballs.
- Heat olive oil in a large skillet over medium-high heat. Cook meatballs in batches until golden brown on all sides. Transfer cooked meatballs to a large plate.
- Add tomato sauce to the skillet set over low heat. Return meatballs to the pan and simmer in the sauce until sauce has thickened a bit and meatballs are cooked through, about 10 minutes.
- Meanwhile, preheat the oven to 400 degrees F.
- Add 3-4 meatballs and marinara to the center of each sliced roll. Top with 2 slices of fresh mozzarella.
- Arrange prepared sandwiches on a baking sheet and bake until cheese has melted and bread is toasted, about 5 minutes.
