Yesterday we had our first thick blanket of snowfall. The first snowfall of the year is so gorgeous. It never gets old. It signals that it's time for flannel, hot chocolate, Christmas shopping, and all the cookies. Our little lady is almost 6 months old now, and she is so curious about everything. She loves to explore, and the snowfall had her captivated yesterday. It was so much fun to just sit and hold her and stare out the window with her for a half hour with not a care in the world, just enjoying the pretty snow and making handprints on the cold window. It's the simple things these days that bring the most joy.
These Pecan Snowball Cookies are the perfect addition to your holiday cookie platter. They're rich and delicious little morsels full of buttery pecan flavors in a fluffy white coat. You won't be able to eat just one! They're quick too- you'll be licking your fingers in less than 45 minutes. Make sure to have some cute napkins handy, powdered sugar is serious business.
Pecan Snowball Cookies

Yield: About 36 cookies
Ingredients
1 cup (2 sticks) unsalted butter, softened
½ cup brown sugar
1 ½ teaspoons pure vanilla extract (good-quality Bourbon Vanilla is excellent in this recipe)
2 ¼ cups all-purpose flour
¼ teaspoon salt
⅛ teaspoon cinnamon
1 cup chopped pecans
1 cup confectioners' sugar
Directions
Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar until light and creamy. Add vanilla and mix until incorporated.
In a medium bowl, whisk together the flour, salt, cinnamon, and pecans.
Add flour mixture to butter mixture and mix on low speed until combined.
Roll into 1-inch balls and arrange on baking sheets about 2-inches apart.
Bake at 350°F 10-13 minutes, until set but not golden. Do not overbake.
Add confectioners' sugar to a small bowl. Once cookies are cooled just enough to handle but still very warm, roll in confectioners' sugar and place back on baking sheet. Allow to cool completely and then roll in confectioner's sugar again.
