4 slices bacon, cooked and crumbled
1/4 cup cider vinegar
2 tablespoons olive oil
2 teaspoons yellow mustard seeds
2 teaspoons minced parsley
1 teaspoon minced onion
1 teaspoon sugar
1 large bunch baby spinach, washed
2 or 3 hard-boiled eggs, sliced
1. Prepare dressing~ Combine cider vinegar, olive oil, mustard seeds, parsley, onion, and sugar.
2. Place spinach in a salad bowl. Pour dressing mixture over spinach and toss. Sprinkle with crumbled bacon and top with egg slices.
