As I've mentioned before, I am not a fan of typical breakfast food. I don't like eggs, syrup, or pancakes. I like my breakfast dishes to be savory, or could-pass-as-a-dessert sweet. I like fruit in just about everything. These waffles are perfect for me. Packed full of juicy blueberry goodness, and not made from a box mix! To make things even more fabulous, I topped mine with homemade blueberry syrup. Now there is a syrup I can get on board with! You'll have a happy belly and a blue tongue. Great way to start the day.
Vanilla Blueberry Waffles

**I have a standard size Waring Pro waffle iron. This recipe made 4 perfectly delicious waffles in my waffle maker.
Ingredients:
1 cup buttermilk
2 large eggs, beaten
4 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
1 ½ cups All-Purpose Baking Mix
1 cup frozen blueberries
Directions:
In a medium bowl, beat the buttermilk, eggs, butter, and vanilla with a fork until well mixed. Add the baking mix and stir just until combined and there are no visible traces of flour. Gently fold in the blueberries. Let the batter sit for 5 minutes.
Grease the waffle iron if it is not nonstick. Scoop batter onto each waffle mold, filling it bu two thirds. The amount of batter you will need depends on the size and type of your waffle iron. Close the waffle maker and cook the waffles according to the manufacturer's directions. Serve immediately.
