Apple Butter

Ingredients

  • 3 pounds assorted apples, peeled and chopped (about 10 apples)
  • 2 cups apple cider
  • 1 cup light brown sugar
  • 1/2 teaspoon Kosher salt
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • pinch of allspice

Instructions

  1. Place apples, cider, sugar, and salt in a heavy-bottomed pot over medium heat. Bring to a simmer and cook until apples are soft, about 30 minutes.
  2. Preheat oven to 250 degrees F.
  3. Remove pot from heat and stir in lemon juice, cinnamon, vanilla, cloves, and nutmeg.
  4. Puree apple mixture in batches in a blender or food processor, or using an immersion blender. Spread in a 9x13-inch baking dish and bake in preheated oven for 3 hours, stirring every 30 minutes.
  5. Let cool completely before sealing in glass jars. Store in refrigerator for up to 7 days.
