Breakfast may be the most important meal of the day, but it doesn't need to be the most complicated. I love fruit with my breakfast, especially if it's baked right in. This Blueberry French Toast Bake combines the juiciness of fresh blueberries with the cinnamon-sugar goodness of French Toast. A perfect start to the day.
While you can assemble this recipe the night before you bake it, I don't necessarily recommend it. It only saves 5 or 10 minutes in the morning, and by allowing the bread to soak overnight increases the risk of a soggy texture once you've baked it. I prefer the texture when it is assembled immediately before baking, but you are welcome to do whatever you would like.
Blueberry French Toast Bake
- Total Time: 1 hour
- Yield: Serves 6-8 1x
Ingredients

- 1 tablespoon unsalted butter, for greasing pan
- 2 cups whole milk
- 5 eggs
- ¾ cup Maple syrup
- 1 teaspoon lemon juice
- 2 teaspoons cinnamon
- ¼ teaspoon salt
- 1 loaf day-old Challah bread, cut into 1-inch cubes
- 2 cups fresh blueberries
- 3 tablespoons sugar
- 1 tablespoon additional cinnamon
Instructions
- Grease 9x13-inch baking dish with butter.
- Preheat oven to 350 degrees F.
- In a large bowl, beat eggs for a few seconds. Add milk, cinnamon, salt, and lemon juice. Whisk until combined.
- Toss cubed bread with the blueberries and arrange in prepared baking dish.
- Pour egg mixture over the top of the bread and blueberries.
- Mix together the sugar and remaining cinnamon. Sprinkle over the top.
- Bake, uncovered, 40-45 minutes until golden brown and filling has set.
- Serve immediately with maple syrup or Homemade Blueberry Syrup
