Sandwiches are quite possibly the single greatest culinary invention of all time. I could live on a sandwich-only diet and be quite content for a very long time. This Caprese sandwich combines some wonderful flavors without much fuss at all. Plus, it's always good to have an excuse to enjoy some of the delicious Basil Pesto that's in my freezer. This is not a complex recipe, but I ordered one at a very popular Cafe/Bakery chain restaurant last week and I couldn't even eat it. Believe me, it is possible to make a bad Caprese sandwich... Who knew?
Caprese Sandwich
Ingredients:
Your choice of bread or sandwich roll, I prefer mini ciabatta rolls.
Homemade Basil Pesto (recipe here)
Fresh mozzarella, sliced
Roma tomatoes, sliced
Directions:
Spread pesto on each half of sliced rolls. Lay tomatoes on top of pesto, and top with mozzarella. Cover with top of roll and place in hot oven for about 5 minutes, until heated through and cheese begins to melt. Enjoy!
