A few weeks ago we were on a backpacking trip on North Manitou Island for a week. We had a fantastic trip, but it doesn't take long to start daydreaming of food when you're hiking and eating in the backcountry. For example, our friend Jim and I spent a good 30 minutes fantasizing about Cilantro while we were hiking on the trail one day. One of our fantasy foods was cilantro-lime rice (from On The Border). I figured I should make a little something in honor of his passionate love for Cilantro, so here is what I came up with: Grilled Cilantro Lime Chicken Skewers.
Cilantro-Lime Chicken Skewers
Ingredients:
4 boneless skinless chicken breasts, cut into 1-inch pieces
skewers
For the marinade-
½ cup olive oil
½ cup freshly squeezed lime juice (about 3 limes)
1 big handful of freshly chopped Cilantro
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ to ½ teaspoon cayenne pepper
Directions:
~Mix marinade ingredients in a gallon-sized zipper bag. Add chicken pieces and place in refrigerator for 2 hours or more.
~Preheat charcoal grill.
~Assemble marinaded chicken onto skewers. Grill until chicken is cooked through.
~Serve with buttered white rice.
