Blueberry Pie

Ingredients

  • Double batch of your favorite pie crust dough
  • 4 cups fresh blueberries
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small cubes
  • 1 egg yolk, lightly beaten
  • “Sugar in the Raw” or turbinado sugar, for sprinkling

Instructions

  1. Preheat the oven to 400°F.
  2. Roll out half of the pie crust dough and place in bottom of pie pan.
  3. In a bowl, combine blueberries, sugar, flour, spices, and lemon juice. Spread into prepared pie crust. Dot filling with butter pieces.
  4. Roll out second half of pie crust dough and cover filling. Cut slits to vent, or cut dough into strips and assemble in a lattice pattern.
  5. Brush crust with egg wash and sprinkle with sugar.
  6. Bake in lower third of oven for 50 minutes.
  7. Enjoy!
