Today would have been my friend Melissa's 29th birthday if it weren't for that fateful day, June 6, 2002...the last day of eleventh grade, when she died in a tragic car accident. I knew her for my whole life, and her friendship always was and will be a very cherished memory. Her life continues to be a testimony and inspiration to others long after her time with us has ended.
One of my many memories of sleepovers and birthdays with Mell was making puppy chow at her house. She introduced me to the little morsels of goodness at school one day when she brought some for the whole class. I learned how to make it in her Mom's kitchen, and think of that day every time I eat puppy chow. This batch is for you, Mell. Happy Birthday!
Ingredients:
9 cups rice Chex
½ cup peanut butter
1 cup semi-sweet chocolate chips
¼ cup butter
1 teaspoon vanilla
1 ½ cups confectioners' sugar
Directions:
Melt together the chocolate chips, peanut butter, and butter. (Either on the stovetop or in the microwave 1-1 ½ minutes). Add vanilla and stir until smooth.
Pour mixture over cereal and combine until cereal is coated well.
Place powdered sugar in a paper grocery bag or large container with a lid. Add chocolate cereal mixture and shake until mixture is evenly coated with the sugar. Spread on wax paper to cool.

P.S. I usually double all ingredients except the cereal. I like my puppy chow to have a lot of chocolate.
