After a long weekend of fun in the sun, an easy weeknight meal is just what we need to settle back in to the swing of things. Fresh basil, juicy red tomatoes, garlic, onion, and linguine are all you need to make this One-Pot Tomato Basil Pasta. Just cook, stir, and then enjoy. The results taste much creamier than you might think, since there isn't any cream or milk added. The flavors are fresh and light, yet filling, and oh so pretty. Plus, you don't have to wash a strainer afterward. Bonus!
One-Pot Tomato Basil Pasta
- Total Time: 45 minutes
- Yield: Serves 4
Ingredients

- 1 pint cherry tomatoes, halved lengthwise
- handful fresh Basil leaves (8-10 leaves), plus more for garnish
- 1 medium onion, sliced thin
- 4 cloves fresh garlic, sliced thin
- freshly ground salt and pepper
- 1 teaspoon Italian herb seasoning (optional)
- 1 teaspoon crushed red pepper flakes, if you prefer a bit of heat (optional, I like mine without)
- 12 ounces linguine
- 4 cups water
- 2 tablespoons olive oil
Instructions
- Add all ingredients to a wide,shallow pot.
- Bring to a boil over high heat.
- Cook 30 minutes, until liquid has evaporated and pasta is tender, tossing frequently with tongs. Taste and adjust seasonings as needed.
- Serve with freshly grated Parmesan and torn Basil leaves.
- Enjoy!
