American Apple Pie

  • 7-8 apples peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons all-purpose flour
  • pinch of salt
  • 1 egg white, beaten lightly
  • 1 additional tablespoon sugar, for sprinkling

Instructions

  1. Preheat oven to 425 degrees F.
  2. Line a pie plate with dough.
  3. Peel, core, and slice apples and toss them in a large bowl with the lemon juice. The lemon juice prevents the apples from turning brown.
  4. In another large bowl, whisk together the sugar, brown sugar, cinnamon, flour, and salt. Add apples to mixture and toss until apples are coated.
  5. Spread apples into prepared crust.
  6. Roll out second disc of dough, and cover apples with it. (If you would like to make a lattice top pie, slice the top crust into even strips and arrange in a basket-weave pattern on top of the apples, then trim and crimp the edges.) Cut slits in top of crust to allow steam to escape.
  7. Brush top of pie crust with egg white and sprinkle with the remaining 1 tablespoon sugar.
  8. Bake at 425 degrees F for 20 minutes, until crust is golden. Reduce temperature to 375 degrees F and bake 30-40 minutes more until filling is bubbling and the crust is golden brown.
  9. Let cool on wire rack for at least 2 hours before serving. (Filling will be much too runny if served immediately.)
