Bananas Foster Sundae

For the Cinnamon-Churro Ice Cream:

  • 4 cups vanilla ice cream
  • 2 teaspoons ground cinnamon, adjusted to taste
  • 2 Churros, crumbled
  • Caramel sauce (store-bought or homemade)
  • 1-2 bananas, sliced
  • Whipped cream (optional)
  • Maraschino cherries (optional)

Instructions

  1. Allow the ice cream to soften for about 15 minutes at room temperature. (Or begin this recipe as soon as you get home from the grocery store with the ice cream, mine is usually softened perfectly by the time I get through the checkout line.)
  2. Scoop desired amount of ice cream into a large bowl. Using a wooden spoon, fold in the crumbled churros. Add cinnamon a little bit at a time, tasting as you go, until you reach your desired flavor.
  3. Cover and return to freezer to chill until firm, about 1 hour.
  4. After the ice cream has hardened, scoop into two dessert bowls. Top with sliced bananas, caramel sauce, whipped cream, and a cherry.
  5. Enjoy!

Notes

Note: Crumbled churros can be omitted and then you'll just have cinnamon ice cream. It is still delicious, but the churros add a fantastic hint of crunchiness to the sundae that sort of offsets the soft bananas and makes for a more interesting texture, in my opinion.
