1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
3/4 teaspoon ground ginger
1 teaspoon sea salt
2 large eggs
170 grams water
67 grams vegetable oil
165 grams finely grated carrot
85 grams (about 1/2 cup) golden raisins, softened in boiling water for 5 minutes, then drained
1 granny smith apple, peeled and finely chopped
Preheat oven to 400°F.
In a large bowl, mix together the flour, oats, granulated sugar, dark brown sugar, pecans, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a medium bowl, whisk together the eggs, water, and oil.
Stir wet ingredients into the dry ingredients, then add the carrots, raisins, and apples. Stir to combine. Let batter rest 15 minutes.
