Carrot Apple Slaw

Bright orange carrot apple slaw tossed with apples, raisins, and pecans. Served in a large white bowl on a light striped linen.

This recipe is a fun, no-cooking-required summer salad that is sweet and tangy and crunchy and delightfully weird. Carrot Apple Slaw is super easy to make, and is such a great addition to your next picnic menu!

Ingredients

Scale

1 cup golden raisins

1/2 cup mayonnaise

2 tablespoons freshly squeezed lemon juice

1 tablespoon granulated sugar

1/2 teaspoon salt

1/8 teaspoon black pepper

4 cups finely grated carrot, about 1 pound*

1-2 Granny Smith apples, cubed, about 1 cup

1/2 cup chopped toasted pecans

Instructions

Plump the golden raisins by placing them in a heatproof bowl and covering them with boiling water for 5 minutes. Drain and set aside.

In a large bowl, whisk together the mayonnaise, lemon juice, sugar, salt, and pepper. Add the finely grated carrots, cubed apples, toasted pecans, and the plumped raisins. Toss very well to coat.

Taste and adjust seasoning as desired. Cover and chill for a few hours before serving.

Notes

*I do not recommend using packaged matchstick carrots for this recipe. Please grate the carrots finely for the best flavor, texture, and the needed moisture for the best results. If you try this with matchstick carrots, you will likely need to add quite a bit more mayo to the dressing and the carrot flavor will not be the same.
