Churros

Ingredients

  • 1 cup water
  • 2 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons canola oil
  • 1 cup all-purpose flour
  • 2 quarts canola oil, for frying
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a small saucepan set over medium heat, combine water, 2 1/2 tablespoons sugar, salt, and 2 tablespoons of oil. Bring just to a boil and then remove from heat. Stir in the flour until a ball of dough forms. Add dough to a piping bag fitted with a large star-shaped tip.
  2. Stir together the 1/2 cup sugar and the cinnamon. Set aside.
  3. Heat frying oil in a deep straight-sided skillet to 375 degrees F. Pipe strips of dough about 8-inches long into the hot oil using a pastry bag. Fry until golden on all sides. (Try to avoid fussing with the dough for the first few seconds of frying as the dough will be fragile.) Drain on paper towels and toss with cinnamon-sugar mixture.
