Crab Canapés

Ingredients

  • 16 mini-toasts
  • 1/4 cup unsalted butter, melted
  • 1 cup canned crabmeat
  • 3 tablespoons mayonnaise
  • 1/3 cup cream cheese
  • 1 cup grated Parmesan
  • 4 green onions, chopped fine
  • 1 teaspoon Old Bay seasoning (I make my own)
  • 1/2 teaspoon sea salt
  • 2 drops Frank's Red Hot Sauce
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Lightly oil a baking sheet. Brush individual toasts with melted butter and arrange on prepared baking sheet. Place in oven and toast until light golden brown, just a few minutes. Be careful not to burn them!
  3. In a medium bowl, mix together the cream cheese and mayonnaise, stirring until evenly blended. Stir in crabmeat until incorporated. Add Parmesan, green onions, sea salt,Old Bay seasoning, Frank's Red Hot sauce, lemon juice, and pepper. Mix until fully incorporated. Taste, and adjust seasonings as needed.
  4. Using a small cookie scoop, arrange the crabmeat mixture on all of the toasts. (The mixture will spread a bit while baking, so don't spread it too close to the edges or your topping will overflow.)
  5. Bake on the middle oven rack until crabmeat mixture has puffed up a bit, but is not brown, about 10-12 minutes.
