Creamy Mushroom Gorgonzola Sauce for Steaks

Ingredients

  • 2 tablespoons unsalted butter
  • 1/3 cup finely chopped onion
  • 1 garlic clove, minced
  • 8 ounces baby bella mushrooms, sliced
  • 1 1/2 cups sour cream
  • 6 ounces Gorgonzola, crumbled
  • salt and pepper
  • Steaks, grilled or cooked to your preferred doneness

Instructions

  1. Heat butter in a skillet over medium heat. Add onion and cook until lightly browned. Add garlic and mushrooms. Cook, stirring frequently, until mushrooms have browned.
  2. Add sour cream to the skillet and bring to a simmer. Sprinkle in the Gorgonzola, and simmer, stirring almost constantly, until cheese has melted and sauce has reduced/thickened to your desireed consistency. (I like mine a little bit thicker rather than runny. Mine usually takes about 10 minutes.)
  3. Season to taste with salt and pepper.
  4. Serve atop a juicy grilled steak, or as a topping for a baked potato, or give it a try on some pasta!
