Homemade Cinnamon Swirl Quick Bread

Ingredients

For the Bread:

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 2 eggs
  • 2 cups buttermilk
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda

For the Cinnamon & Sugar Mixture:

  • 2/3 cups sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease 2 loaf pans.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together until completely incorporated. Add eggs and continue mixing. With the mixer on low speed, add milk and flour mixed with baking soda. Mix until all flour is fully incorporated.
  3. Spread 1/4 of the batter into the bottom of each loaf pan, using half the batter.
  4. Mix together the sugar and cinnamon and sprinkle 2/3 of the mixture over the batter in each of the pans. Spread the remaining batter into the loaf pans and top with remaining cinnamon sugar mixture. Using a knife or toothpick, make a few swirls in the batter.
  5. Bake at 350 degrees for 50 minutes or until a toothpick comes out clean when inserted. Cool loaves in pans for 20 minutes before removing from pan or slicing. Enjoy!
