Italian Meatball Sandwiches

Ingredients

  • 1 1/2 pounds ground beef
  • 2 tablespoons minced onion
  • 2 gloves garlic, minced
  • 1 tablespoons fresh parsley, minced
  • 2/3 cup breadcrumbs
  • 1/3 cup grated Parmesan
  • 1 large egg, lightly beaten
  • 2 tablespoons olive oil
  • 4-6 cups Marinara Sauce (Homemade Marinara or Tomato Sauce with Butter and Onion both work great for this recipe.)
  • 4-6 ounces fresh mozzarella
  • 4 sandwich loaves or rolls

Instructions

  1. In a large bowl, gently combine ground beef, onion, garlic, parsley, breadcrumbs, Parmesan, and egg until all ingredients are incorporated.
  2. Using clean hands, roll the meat mixture into 12-16 meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Cook meatballs in batches until golden brown on all sides. Transfer cooked meatballs to a large plate.
  4. Add tomato sauce to the skillet set over low heat. Return meatballs to the pan and simmer in the sauce until sauce has thickened a bit and meatballs are cooked through, about 10 minutes.
  5. Meanwhile, preheat the oven to 400 degrees F.
  6. Add 3-4 meatballs and marinara to the center of each sliced roll. Top with 2 slices of fresh mozzarella.
  7. Arrange prepared sandwiches on a baking sheet and bake until cheese has melted and bread is toasted, about 5 minutes.
