One-Pot Tomato Basil Pasta

  • Yield: Serves 4

Ingredients

Units Scale
  • 1 pint cherry tomatoes, halved lengthwise
  • handful fresh Basil leaves (8-10 leaves), plus more for garnish
  • 1 medium onion, sliced thin
  • 4 cloves fresh garlic, sliced thin
  • freshly ground salt and pepper
  • 1 teaspoon Italian herb seasoning (optional)
  • 1 teaspoon crushed red pepper flakes, if you prefer a bit of heat (optional, I like mine without)
  • 12 ounces linguine
  • 4 cups water
  • 2 tablespoons olive oil

Instructions

  1. Add all ingredients to a wide,shallow pot.
  2. Bring to a boil over high heat.
  3. Cook 30 minutes, until liquid has evaporated and pasta is tender, tossing frequently with tongs. Taste and adjust seasonings as needed.
  4. Serve with freshly grated Parmesan and torn Basil leaves.
  5. Enjoy!
