Pecan Snowball Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 cup chopped pecans
  • 1 cup confectioners' sugar

Instructions

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar until light and creamy. Add vanilla and mix until incorporated.
  3. In a medium bowl, whisk together the flour, salt, cinnamon, and pecans.
  4. Add flour mixture to butter mixture and mix on low speed until combined.
  5. Roll into 1-inch balls and arrange on baking sheets about 2-inches apart.
  6. Bake at 350°F 10-13 minutes, until set but not golden. Do not overbake. (Mine are always perfect at exactly 11 minutes.)
  7. Add confectioners' sugar to a small bowl. Once cookies are cooled just enough to handle but still very warm, roll in confectioners' sugar and place back on baking sheet. Allow to cool completely and then roll in confectioner's sugar again.
