Pink Grapefruit Soda

Ingredients

For Soda:

  • Juice of 2 pink grapefruits, freshly squeezed (about 1 1/2 to 2 cups)
  • Juice of 1 lemon (about 3 tablespoons)
  • pinch of salt
  • 1 liter Club soda (or more if desired)
  • Ice

For the Simple Syrup:

  • 1 cup granulated sugar
  • 1 cup water

Instructions

To Make the Simple Syrup:

  1. In a small saucepan, stir together the sugar and water and heat over medium heat until it simmers and all sugar has completely dissolved. Remove from heat and allow to cool. (Simple syrup can be stored in the refrigerator in an airtight container.)

To Make the Soda:

  1. In a pitcher, stir together the grapefruit juice, lemon juice, and salt. Strain to remove pulp, if desired. (I didn't strain mine. I don't mind the little bit of pulp.)
  2. Fill glasses with ice, and pour juice mixture into glasses until they're half full. Fill glasses the rest of the way with club soda. Sweeten with simple syrup to taste.
  3. Garnish with lemon slices and cute straws.

Notes

*Note: Instead of mixing the drinks in the individual glasses, you could also pour the soda into the pitcher with the juice and serve it that way. Both ways work well. Just be sure to mix the juice with the soda at the last minute so it doesn't lose its fizz.
