Ready to eat in less than 15 minutes, and you don't even have to leave the house for take-out. These sesame noodles are packed with toasty, slightly spicy flavor, and are great served warm or cold.
4 3-ounce packages Ramen noodles, noodles only (no seasoning packet)
2 tablespoons toasted sesame oil
4 tablespoons low sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons Chinese toasted sesame paste (NOT tahini)
1 tablespoon creamy peanut butter
1 tablespoon granulated sugar
1 tablespoon grated fresh ginger
2 teaspoons minced garlic
2 teaspoons chili oil or crispy chili oil (more or less to taste)
Chopped roasted peanuts, for serving
Dried Szechuan pepper flakes, for serving
Bring water to boil in a large saucepan.
In a medium bowl, whisk all sauce ingredients together until smooth.
Add ramen noodles to pot, boiling for 3 minutes or until tender. Drain. Return to pot.
Add sauce mixture to the pot and toss to thoroughly coat.
Serve warm or cold with chopped peanuts and pepper flakes, if desired.
