Sweet Potato Pie

Ingredients

  • 2 large sweet potatoes (about 2 pounds), roasted and peeled
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon ginger
  • 1 1/4 cups whole milk (OR 12 ounces evaporated milk. See post above.)
  • unbaked or par-baked pie crust (See post above.)

Instructions

  1. Preheat oven to 375°F.
  2. In the bowl of a food processor, puree the roasted sweet potatoes until very smooth.
  3. Add sugar, eggs, vanilla, cinnamon, nutmeg, salt, and ginger to the food processor bowl and process until smooth.
  4. Add milk to food processor and process until all ingredients are incorporated and smooth, scraping down sides of bowl as needed.
  5. Pour filling mixture into pie crust. Bake at 375°F for 55-60 minutes until the center does not jiggle and a sharp knife comes out almost clean.
  6. Let cool completely before serving, or refrigerate. Filling will set further as it cools.
