Three Cheese Fondue

Ingredients

  • 1 garlic clove, halved lengthwise
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup dry white wine
  • 2 cups aged white cheddar, grated
  • 2 cups Emmental cheese, grated
  • 2 cups Gruyere cheese, grated

Dipping recommendations:

  • Cubed French bread
  • Roasted potatoes
  • Steamed broccoli
  • Steamed cauliflower
  • Apple wedges

Instructions

  1. In a small saucepan, bring wine to a boil.
  2. Rub the cut-side of the garlic clove inside the bottom of of a heavy-bottomed 4 quart pot or large saucepan. Discard the garlic. Add butter and melt over low heat. Once butter is melted, add flour and cook, whisking constantly, until flour has cooked but not browned, about 3 minutes.
  3. Slowly add the wine to the cooked flour, stirring constantly with a whisk until mixture is smooth.
  4. Add cheeses, in small increments, allowing cheese to melt completely before the next addition.
  5. Once all the cheese has melted thoroughly, transfer to a fondue pot and keep warm over low heat.
  6. Serve and enjoy!
