Blueberry French Toast Bake

Ingredients

  • 1 tablespoon unsalted butter, for greasing pan
  • 2 cups whole milk
  • 5 eggs
  • 3/4 cup Maple syrup
  • 1 teaspoon lemon juice
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 loaf day-old Challah bread, cut into 1-inch cubes
  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1 tablespoon additional cinnamon

Instructions

  1. Grease 9x13-inch baking dish with butter.
  2. Preheat oven to 350 degrees F.
  3. In a large bowl, beat eggs for a few seconds. Add milk, cinnamon, salt, and lemon juice. Whisk until combined.
  4. Toss cubed bread with the blueberries and arrange in prepared baking dish.
  5. Pour egg mixture over the top of the bread and blueberries.
  6. Mix together the sugar and remaining cinnamon. Sprinkle over the top.
  7. Bake, uncovered, 40-45 minutes until golden brown and filling has set.
  8. Serve immediately with maple syrup or Homemade Blueberry Syrup
