Breakfast may be the most important meal of the day, but it doesn’t need to be the most complicated. I love fruit with my breakfast, especially if it’s baked right in. This Blueberry French Toast Bake combines the juiciness of fresh blueberries with the cinnamon-sugar goodness of French Toast. A perfect start to the day.
While you can assemble this recipe the night before you bake it, I don’t necessarily recommend it. It only saves 5 or 10 minutes in the morning, and by allowing the bread to soak overnight increases the risk of a soggy texture once you’ve baked it. I prefer the texture when it is assembled immediately before baking, but you are welcome to do whatever you would like.
