Blueberry Gin Fizz Cocktail

Bright and refreshing, this blueberry gin cocktail is very easy to drink. Perfect for a warm summer evening on the patio. The blueberry syrup can be made with fresh blueberries or frozen, and is delicious on ice cream, in lemonade, drizzled over pancakes, etc.

Ingredients

For the blueberry syrup-

2 cups blueberries, fresh or frozen

2 cups granulated sugar

2 cups water

1 tablespoon lemon juice

For the cocktail- 

2 ounces dry gin

1 ounce fresh lime or lemon juice

1 ounce blueberry syrup (recipe below)

Club soda

Fresh mint, for garnish

Lime or lemon wedges, for garnish

Blueberries, for garnish

Instructions

Make the blueberry syrup- 

Combine blueberries, sugar, water, and lemon juice in a medium saucepan. Bring to a boil, then reduce to a simmer.

Continue simmering, stirring frequently, until thickened slightly and reduced by half, about 10-15 minutes.

Pour through fine mesh sieve. Let cool then keep in the refrigerator for up to 2 weeks.

Yield: About 3 cups syrup. This syrup is great in cocktails, lemonade, on pancakes and waffles, drizzled over ice cream, etc.

Make the cocktail- 

Combine gin, juice, and blueberry syrup in a cocktail shaker. Fill with ice and shake vigorously until completely chilled.

Strain into 2 chilled glasses. Top with club soda and garnish with mint, lime wedge, and extra blueberries.
