The act of making soup is one of my very favorite things to do in the kitchen. It is so relaxing and satisfying to have a big pot simmering on the stove. The aroma, the sneaking a peek into the pot, and of course a little taste now and then. The anticipation of a warm, cozy bowl of soup on a chilly day is such a comfort. This Creamy Tortellini and Sausage Soup is packed with Tuscan flavors that even our picky little ones love. What’s not to love about tortellini, Italian sausage, creamy Parmesan, tomatoes, and fresh spinach?




Creamy Tortellini and Sausage Soup
Creamy tortellini soup with spinach, Italian sausage, tomatoes, and Parmesan is a crowd-pleaser that will satisfy even the pickiest eaters around your family table.

Ingredients
2 tablespoons olive oil
1-pound ground Italian sausage
1 medium sweet onion, diced (about 2 cups)
3 carrots, peeled and diced (about 1 ½ cups)
2 stalks celery, diced (about ½ cup)
3 cloves fresh garlic, minced
1 teaspoon onion powder
1 teaspoon salt, plus more to taste
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon freshly ground black pepper, plus more to taste
6-8 cups chicken stock
3 cups heavy cream
4-ounces cream cheese, cut into pieces
14.5-ounce can diced tomatoes (do not drain)
12 ounces dry cheese tortellini
2 cups chopped baby spinach
¾ cup grated parmesan, plus more for serving
Instructions
Directions:
In a large (5qt) heavy-bottomed pot or Dutch oven over medium heat, heat the oil. Add sausage to pot and cook until browned, breaking into bite-sized pieces. Transfer browned sausage to a bowl and keep warm, reserving the oil in the pot.
Add onion, carrots, celery, and garlic to the pot and cook until onion are just beginning to brown and carrots are tender. Add chicken stock, onion powder, salt, garlic powder, basil, oregano, and black pepper, scraping the bottom of the pot to loosen any browned bits. Return the sausage to the pot and add cream, cream cheese, and diced tomatoes. Bring to a simmer, stirring frequently. When cream cheese has melted and combined, add the tortellini. Stir to combine. Cover and simmer over very low heat, stirring occasionally for 1 hour before adding the spinach and parmesan. Continue simmering, covered, for an addition 45 minutes or until tortellini is tender. Taste and adjust seasoning as needed. Serve immediately with additional parmesan.
