Holidays involve a lot of things. Celebrating. Spending time with family. Sharing with those less fortunate than ourselves. Gift giving. Feasting. And of course, treats. I love chocolate as much as anyone else, but at this time of year, I’m all about white chocolate everything. Have you devoured an entire package of white fudge Oreos yet this year? If not, you’re doing it all wrong. In the spirit of my love for white chocolate, I decided to make White Chocolate Fudge instead of the usual, albeit delicious, traditional variety. Oh dear. The result was a silky smooth, undeniably rich indulgence speckled with vanilla bean that was (GASP) begging for a little something spicy to complement the sweetness. Enter my new favorite snack, Spiced Pecans. Adding the spiced pecans did the trick. I love it. They’re utterly decadent, so sharing with friends is a must. You’ve got to save some room for the other goodies at the holiday table anyway, right?
This Vanilla Bean White Chocolate Fudge is incredibly simple to prepare. Just melt everything together, then spread in a pan and allow to chill for a few hours. It's a perfect hands-off dessert to bring to that holiday party that you have no time to prepare for. Or just make some for yourself if you need a little sugar boost to get you through the final days of shopping and gift-wrapping.

Ingredients
- 16-ounces white chocolate, chopped
- 14-ounces sweetened condensed milk
- ¼ teaspoon kosher salt
- 1 tablespoon Nielsen-Massey Madagascar Bourbon Vanilla Bean Paste OR 2-3 vanilla beans scraped and seeded
- 1 ½ cups Spiced Pecans (optional, but recommended), or toasted pecans
Instructions
- Line an 8x8-inch square baking pan with waxed paper.
- In a medium saucepan over medium-low heat, melt the white chocolate with the condensed milk and salt. Once completely melted, remove from heat and stir in vanilla bean paste. Fold in 1 cup of Spiced Pecans.
- Spread into prepared pan, and sprinkle with remaining Spiced Pecans.
- Chill until firm, about 2-3 hours.
- Remove fudge from pan by lifting on the waxed paper. Cut into squares. Enjoy.
