Gin and ginger are such a refreshing yet spicy pair. I love the simultaneous crispness and punch of spice that this extra gingery Ginger Gin Mule has to offer. Combined with the fresh lime juice and the coolness from the mint, this is perfect for happy hour on a sunny spring evening slowly sipping a ginger gin mule on the porch.

It’s all about the details…
To level up the ginger flavor, we’re using a ginger simple syrup made from fresh ginger. It is by far my favorite cocktail syrup, and it also goes great in lemonade, iced tea, hot tea, or drizzled on ice cream. All you need to make the syrup is fresh ginger, sugar, and water. Here's the recipe for ginger syrup as well as another gin cocktail that you might enjoy.
As far as ginger beers go, use your favorite one, but mine is Fever Tree. It’s spicy and fizzy and fantastic. If you prefer to use ginger ale (Vernors is truly the only worthy ginger ale) instead of ginger beer, I recommend doubling the ginger syrup to amp up the ginger flavor even more since ginger beer has a much more prominent ginger flavor.
Let’s talk gin. For this recipe we definitely want a London Dry gin since it provides more botanical flavors that complement the spicy ginger really well. Gins vary in their amount of botanical flavors, for sure. If you are looking for a really good multi-purpose gin that'll work in sweet and savory drinks, I like Beefeater. It's got enough flavor that you can taste it, but it's not overpowering enough to taste like a Christmas tree, as some gins do. Beefeater works great in this Gin Mule recipe.
Other great options for this recipe are Tanquerray or The Botanist because of their more flavor-forward profiles than some others on the market. I’m absolutely not a cocktail expert though, these are just my personal observations that I’ve gleaned from my bar cart and watching cocktail classes on Zoom and Instagram Live.

How to make a Ginger Gin Mule-
- Shaken or stirred? Totally up to you. First we mix the ginger syrup, gin, and lime juice. I usually use my cocktail shaker for drinks with citrus juice because apparently that’s the rule of thumb for people who know more than me. Either way, you need to just shake or stir vigorously until the shaker or mixing glass is so cold that you can barely hold onto it.
- Divide into 2 chilled copper mugs filled with ice. Top with ginger beer, lime wedge, and mint leaves.

Ingredients
For the ginger syrup-
2 fist-sized pieces of fresh ginger, peeled and sliced very thin, equal to about 1 cup
1 cup granulated sugar
1 cup water
For the cocktail-
2 ounces London dry gin
1 ounce fresh lime juice
½ ounce ginger syrup, optional for extra spice
Ginger beer, preferably Fever Tree
Fresh mint, for garnish
Lime wedges, for garnish
Instructions
Make the ginger syrup-
In a small saucepan, combine the fresh ginger slices, sugar, and water. Bring to a boil over medium heat then reduce heat to maintain a simmer. Continue simmering until reduced by half, about 15 minutes.
Pour syrup through a fine mesh sieve to remove ginger pieces. Let cool to room temperature then store in an airtight container in the refrigerator for up to 3-4 weeks.
Prepare the cocktail-
Combine gin, lime juice, and ginger syrup in a cocktail shaker. Fill with ice and shake vigorously until completely chilled.
Strain into two copper mugs filled with ice. Top with ginger beer and garnish with mint and a lime wedge.
Notes
If using ginger ale instead of ginger beer, double the amount of ginger syrup in the cocktail since ginger ale has a much milder ginger flavor.
